Spicy Pumpkin Chili

As fall approaches, the pumpkin craze begins. Pumpkin spice lattes, candles, and pies, galore! But we welcome the pumpkin craze, because pumpkins are really good for you! It's packed with fiber which helps with weight loss, making you feel fuller longer. (plus, it's low calorie, furthering the weight loss benefits). The vitamin A in pumpkin also helps boost your immunity to ward off infections and viruses—a big bonus during the cold and flu season.
When you combine pumpkin with the other healthy ingredients in this recipe (beans, tomatoes, peppers, onion, and garlic all have great nutritional value!), you end up with a tasty dinner that leaves you feeling satisfied both physically and mentally.
- 1 pound ground turkey
- 1/2 tsp crushed red pepper flakes, or to taste
- 1 tsp minced garlic
- 1/2 large onion, diced
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- 1 (15 oz) can kidney beans, drained and rinsed
- 1 (15 oz) can black beans, drained and rinsed
- 1 (15 oz) can Great Northern beans, drained and rinsed
- 1 (8 oz) can tomato sauce
- 1 (4 oz) can tomato paste with garlic and onions
- 2 (14.5 oz) cans petite diced tomatoes
- 1 (14.5 oz) can fire roasted diced tomatoes
- 1 (15 oz) can pumpkin puree
- 2 tsp pumpkin pie spice
- 2 tsp chili powder
- 1 tsp ground cumin
- 1 tsp salt, or to taste
1. Heat a large skillet over medium-high heat
2. Cook and stir the turkey in the skillet until crumbly and no longer pink, about 5 minutes
3. Stir in the red pepper flakes, garlic, and onion; continue cooking until the turkey has browned and the onion has softened and turned translucent.
4. Add the green and red bell pepper and cook 5 minutes more.
5. While the turkey is cooking, combine the kidney beans, black beans, Great Northern beans, tomato sauce, tomato paste with garlic and onions, petite diced tomatoes, fire roasted diced tomatoes, and pumpkin puree in a large slow cooker. Season with pumpkin pie spice, chili powder, cumin, and salt. Stir in the ground beef mixture.
6. Cook on Low until the chili is hot, 1 to 2 hours.
