Hold the beef the next time you make this yummy comfort food. Replacing meat with beans helps protect your brain’s thinking ability. Beans are high-protein powerhouses that contain nutritional compounds that strengthen your immune system, kill cancer cells and give your brain cells a youthful boost. This recipe is also filled with lots of brain-healthy vegetables, including celery, which may help cool off destructive inflammation in the brain’s memory center.

Ingredients: ⅛ tbsp coconut oil ¼ cup black beans ¼ cup chopped celery ¼ cup vegetable broth ⅛ tsp whole cumin seed ⅛ tbsp dried ground oregano ⅛ cup raw chopped onions ⅛ jalapeno pepper ¼ tsp salt ⅔ clove garlic ⅛ tsp chili powder ½ cup tomatoes ½ cup eggplant ½ cup red bell pepper ¼ cup kidney beans ½ cup zucchini ½ tbsp diced green chilies


Preparation:

1. Heat a teaspoon of oil in a large skillet over medium heat for about 1 minute. Add bell pepper and celery, sauté for about 2 minutes.

2. Add garlic, jalapeño, chili powder, chilis, oregano, cumin seed, salt and tomatoes. 

3. Add broth.

4. Add beans.Stir thoroughly and heat through on low-medium, about 5 minutes. Serve hot.
