Fire Cracker Parfait
Blueberries, raspberries, and strawberries pack a healthy punch! These little fruits are not just a sweet summer treat; they're also a sweet way to ward off disease.
Did you know that blueberries contain the antioxidant anthocyanin, which helps keep your memory sharp? Or that raspberries have an anti-cancer compound called ellagic acid? Berries also contain healthy doses of fiber to help with digestion, and studies show they may be good for your heart and bones, too, thanks to their diverse range of polyphenols (a compound found in natural plant food sources).
With both health benefits and a taste this good, you don't have to save these parfaits for just your 4th of July party. Enjoy throughout the entire summer!
- 3 Cups fresh raspberries or sliced strawberries (or both!)
- 3 Cups fresh blueberries
- 12 oz vanilla yogurt*
- ½ tsp vanilla extract
*Use dairy-free option for a dairy-free/vegan recipe
1. In a large bowl, stir together yogurt and vanilla extract
2. In six 12-oz glasses or dessert dishes, alternate layers of berries with layers of yogurt mixture.
3. If not served immediately, cover and chill for up to one hour.
